This family property of 3 hectares was taken again by Jean-DenisSALVERT since 1999. The vineyard is followed very attentively, a stripping side raising as of the nouaison and of the very serious green grape harvest are carried out. Approximately mid-August, a stripping setting side to homogenize maturation. The dates of the grape harvest are not fixed which complete maturation of the grape has, fruit being the paramount element in making of a high-class wine. The grape harvest is carried out manually. The wine making begin with cold
pre-fermentations over approximately 10 days, the temperatures are maintained between 26° and 31°. The cuvaison is spread out over 30 to 35 days, one or two unballastings are practised during the wine making. The malolactiques ones are carried out out of new barrels, the breeding is done on fine dregs for 8 months with regular bātonnages. The wines are high 15 month out of barrels before the setting out of bottle without filtering nor joining.
